Select a bacon or pork skin with plenty of fat and sufficient meat. Leave it out of refrigeration for at least one hour so that the skin is drier.
We proceed to cut into long strips about two centimeters wide.
Now we cut the strips into different shapes. We can cut into squares.
We can also make an unfinished cut to form a kind of accordion, it will be a long crackling sectioned.
Place a pot with water over medium high heat with enough capacity to place all the pieces, add salt and garlic to the preparation. Let it cook.
When foam starts to form, carefully remove it.
Continue cooking until they are dry, stirring every so often so they do not stick together.
When the water dries, the oil will start to come out of the grease.
Remove from the pot to another container.
We add some flour to prevent the oil from splashing when frying.
Place the pork rinds in the same oil in a pot and let them fry for 5 to 7 minutes.
When they are well browned, remove them to a container with absorbent paper to remove some of the oil.
Serve and eat alone or with whatever you like.
