Ingredients
  

For the Caramel

  • 1/2 cup Sugar Cup
  • 1/4 cup Water

For the Preparation of the Bread Cake

  • 300 gr Hard bread
  • 1/2 Liter Milk
  • 3 unit Eggs
  • 1 cup Sugar
  • 4 tbsp Melted butter
  • 1/2 tbsp Ground Cinnamon
  • 1/2 tbsp Lemon zest
  • 1 pizca Salt
  • 1 tbsp Vanilla Essence
  • 1 tbsp Rum - optional
  • 70 gr Raisins

  • The first thing to do is to place the raisins in a glass container and pour hot water over them to hydrate them.

  • Now cut the bread into small pieces and place it in a container.

  • Pour the milk over the bread and stir so that the bread absorbs it, let it rest for about 20 minutes.

  • To make the caramel, add sugar and water in the container where we are going to make the cake. We put it over low heat and stir until we get the caramel. Then we spread the caramel very well on the bottom and edges.

  • With a balloon whisk we beat the bread with the milk to mash the bread well so that there are not so many lumps.
  • In a bowl place the eggs and sugar and mix beating for about 5 minutes. Add the vanilla essence, cinnamon and salt, stir to integrate.
    Now add the melted butter and the lemon zest.

  • Now incorporate the mixture of bread and milk, beat until a homogeneous mixture is achieved. Add the previously drained raisins.
  • Place the mixture in the cake pan over the caramel. Bake in the oven for about 50 minutes. Remove the cake from the oven and let it rest for a few minutes and then remove it from the mold.
