Ingredients
  

Melao del papelón

  • 300 gr Papelón
  • 1 taza Water
  • 1 unit Lemon zest

Dough for catalinas

  • 250 gr Melao de papelón
  • 75 gr Unsalted butter
  • 1 unit Egg
  • 1/2 tbsp Vanilla
  • 445 gr All-purpose wheat flour
  • 1/2 tbsp Cinnamon powder
  • 1/2 tbsp Salt
  • 1/2 tbsp Baking powder

Instructions
 

Preparation of the base dough

  • In a bowl, mix the flour, papelón, salt and yeast.
  • In another bowl, melt the butter and then add the eggs, milk and vanilla essence. Mix well.
  • Add the liquid mixture little by little to the dry ingredients, mixing until a smooth and homogeneous dough is obtained.
  • Cover the dough with a damp cloth and let it rest for about one hour.
  • After resting, degas the dough by lightly tapping it with your knuckles.

Incorporation of ingredients and kneading

  • Add the lemon zest to the dough and knead until it is well distributed throughout the dough.
  • Knead the dough for about 10 minutes, until it is smooth and elastic.
  • Cover the dough with the damp cloth again and let it rest for another 30 minutes.

Forming and baking of catalinas

  • Divide the dough into small portions and shape each one into a ball.
  • Place the dough balls on a baking sheet covered with parchment paper.
  • Lightly press each ball of dough to flatten it slightly.
  • Let the catalinas rest for about 15 minutes before putting them in the oven.
  • Pre-heat the oven to a temperature of 180 degrees Celsius.
  • Bake the catalinas for approximately 15-20 minutes or until golden brown and cooked through.
  • Remove the catalinas from the oven and let them cool before enjoying.
