Venezuelan coconut preserves are prepared by grating a fresh coconut and mixing it with water, sugar or papelón, cinnamon and cloves. The mixture is cooked over medium-low heat, stirring constantly, until it thickens and most of the water has evaporated. Finally, add vanilla essence and let it cool before serving or storing.

Ingredients
  

  • 1 unit coconut (once grated, weighed 300gr approx)
  • 200 gr Papelón, panela or grated piloncillo. If you want them white or colored, use sugar instead of paper and you can use colorants.
  • 250 ml Coconut water (from the same coconut)
  • 1 unit Pinch of salt
  • 1 unit Lemon peel
  • 1 unit Cinnamon
  • 1 Pinch Baking soda for shine (optional)

Instructions
 

  • Peel and grate the fresh coconut using a fine grater.

  • In a medium saucepan, mix the water and papelón and bring to medium heat until the papelón is completely dissolved.

  • Add the cinnamon and lemon peel to the water and paprika mixture and cook for a few minutes to release the flavors.
  • Add the grated coconut to the sugar-water mixture and mix well.
