Before you stop reading because you think arepas are only made with corn, hear me out. The most traditional versions of arepas call for flour made from corn to make the dough. Actually, plantains replace this ingredient in the recipe, using ripe plantains instead to give it a different, more flavorful taste.
Wash the bananas in plenty of water, remove the tips and cut into three or four pieces.
Place the plantains in a pot with enough water to cover them and cook over medium heat.
Once the bananas are soft, remove from the water, remove the shell and cut in half to remove the "banana center seam".
Mash the bananas with a fork, avoiding lumps as much as possible.
Now it is time to knead the bananas until a consistent and not too hard dough is obtained, adding some water if necessary.
Divide the dough into equal sizes and form into balls to make the arepas.
Flatten the banana dough balls making circles with your hands to shape them into arepas. Then place in a frying pan over medium heat for about 5 minutes per side.

Remove the arepas from the pan and add grated white cheese.
