Ingredients

Ingredients for the dough

  • 200 gr Precooked corn flour
  • 50 gr Linseed
  • 50 gr Oat Flakes
  • 1/2 cda Salt (to taste)
  • 3 Tazas Water that is not cold

Ingredients for the filling

  • 30 gr Olive tapenade
  • 30 gr Arugula
  • 30 gr Fresh tomato
  • 30 gr Spreadable goat cheese
  • 30 gr Roasted red pepper

Instructions

Arepa Preparation

  • Place the corn flour in a container with enough capacity to knead, add salt to taste, oat flakes and flaxseed.
  • Gradually add the water and join the whole mixture, removing any lumps that may form. We begin to knead until we obtain a consistent, smooth dough that does not stick easily in our hands.
  • We place a budare over medium heat to warm up.
  • Form balls of the same size with the dough and start shaping the arepas with both hands. If necessary we moisten our hands so that the arepas do not stick. Flatten as much as we want, depending if we like the arepa thick or thin.
  • Once the budare is hot we can put some oil or butter so that the arepa does not stick when cooking. Place the arepas for about 6 minutes per side. If we want them to be more toasted we leave them a little longer, but we must be careful not to burn them.

Preparation of the filling

  • First we clean the tomato and the paprika washing with abundant water.
  • We chop the tomato in wheels.
  • Prepare the roasted paprika. We start by covering all the paprika with oil and then we place it directly on the fire until all the skin is burnt. Let the paprika rest until we can remove the skin without burning it.
  • Once the arepas and the paprika are ready, we proceed to fill the arepas and try this delicious recipe.
