Ingredients

  • 1 unit Large Ajoporro
  • 1/2 cup Mayonesa
  • 2 tbsp Butter
  • 1/2 tbsp Edible oil
  • 1/4 tbsp Black pepper
  • 1 pizca Salt

Instructions

  • The first thing to do is to clean the ajoporro very well, remember that a large part of what we are going to use is the root and we must remove the soil that it may bring.
Cut where the branches begin and use the trunk, both the green and the white part, preferably the innermost part which is the most tender.
Chop the garlic in very small pieces, about 80 grams approximately.

  • Place a frying pan over low heat and add the oil. Then add just a tablespoon of butter and stir it all over the pan until it melts, without burning.
  • Now we add the garlic and the garlic in the frying pan and stir to distribute the cooking. Then add the pepper and continue stirring. Cook for approximately 7 minutes.
  • When it is taking a golden color add another tablespoon of butter and stir until it melts completely, remove from heat and let stand to cool.
  • In a serving bowl, place the mayonnaise and then add the sofrito de ajoporro, add salt and mix well. Ready to enjoy.
