Cook the meats in a pressure cooker with onion, garlic, long onion and salt for 20 minutes.
Chop the bacon into cubes and fry in its own fat in a frying pan.
Brown the chorizo slices in the same pan without adding oil.
Chop the onion, paprika, tomato, long onion and garlic to make the sofrito.
Fry the sofrito in the same pan, add Worcestershire sauce and cook for a few seconds.
Discard the cooked meats and add them to the sofrito.
Heat the arepas and spread butter on them if desired.
Place a layer of shredded meats on each arepa.
Add quail eggs, cracklings and chorizo slices.
Add sauces to taste over the meat.
Melt mozzarella cheese and add it on top of the arepas.
Garnish with more sauce and a quail egg.
Serve and enjoy.
