Arepas con Todo: A Colombian Feast
Crunchy arepas stuffed with meat stew, chicharrón, chorizo, eggs and cheese. Colombian flavors at home!

Ingredients
  

For meats:

  • 250 gr chicken breast
  • 250 gr beef (brisket)
  • 1/2 unit white onion
  • 3 dientes garlic
  • 1 tallo long onion
  • 1 pizca Salt to taste

For the bacon:

  • 250 gr bacon
  • 1 pizca Salt to taste
  • 1 pizca Black pepper to taste

For the sofrito:

  • 1/2 unit white onion
  • 1/4 unit red or green bell pepper
  • 1 unit ripe tomato
  • 1 ramita sprig of long onion
  • 3 dientes garlic
  • 1 pizca Salt to taste
  • 1 pizca Black pepper to taste
  • 1/2 tbsp turmeric
  • 1/4 cup Worcestershire sauce (optional)

To assemble the arepa:

  • 5 unit Arepas de maíz
  • 1 tbsp Butter (optional)
  • 12 unit Quail eggs
  • 1 cup Chicharrones
  • 1 cup Slices of chorizo
  • 1 unit Sauces (tomato sauce, pink sauce, pineapple sauce)
  • 250 gr mozzarella cheese

Instructions
 

  • Cook the meats in a pressure cooker with onion, garlic, long onion and salt for 20 minutes.
  • Chop the bacon into cubes and fry in its own fat in a frying pan.
  • Brown the chorizo slices in the same pan without adding oil.
  • Chop the onion, paprika, tomato, long onion and garlic to make the sofrito.
  • Fry the sofrito in the same pan, add Worcestershire sauce and cook for a few seconds.
  • Discard the cooked meats and add them to the sofrito.
  • Heat the arepas and spread butter on them if desired.
  • Place a layer of shredded meats on each arepa.
  • Add quail eggs, cracklings and chorizo slices.
  • Add sauces to taste over the meat.
  • Melt mozzarella cheese and add it on top of the arepas.
  • Garnish with more sauce and a quail egg.
  • Serve and enjoy.
