Creamed pumpkin soup is a delicious creamy soup, easy to make and economical. It is prepared with pumpkin, onion, garlic, chicken broth, evaporated milk, and seasoned with salt, pepper and nutmeg. We start by cleaning the ingredients to proceed to cut them. We cut the onion, the bell pepper and the chives.
Now it is the turn of the pumpkin, which we must remove the inner part where the seeds are.The size of the cuts does not matter, but they should not be too big. You can cook with or without skin, but if you choose with skin you have to clean very well.We also cut the potatoes and the carrot that are optionally used in this recipe and increase its creaminess.
Now in a pot with enough space and some oil, place the onion, scallion and chopped paprika over medium heat. Cook until the onion is transparent.
Then add the potatoes and carrots, cook for a few minutes and add the pumpkin pieces. Add enough water to cover the ingredients and mix well. We also add salt, turmeric, pepper and garlic.
Cover the pot and cook for 30 minutes, stirring every so often to prevent the ingredients from sticking to the pot. After the time is over, check if the pumpkin is soft and remove from the heat.
Let stand for a few minutes and then take to the blender. Serve and decorate.
