Place a pot with enough water over medium heat to boil or parboil the potatoes. This allows us to save a little time while preparing the potatoes.
Wash well and proceed to peel the potatoes, which must be very clean to obtain an impeccable dough.
We chop the potatoes in equal sizes and place them in the pot with hot water, being careful not to burn them when the water splashes. Add a little salt.
Let them boil for about 20 minutes or until they are soft. Remove from the pot and place in a container, let stand just a little and begin to mash with a fork before they cool.
We add a tablespoon of butter to give more flavor and texture to the dough. We also add black pepper and check if it is well salted.
Now we add wheat flour, about three or four tablespoons, to give more consistency to the dough and to be able to form the arepas.
We start shaping the arepas, leaving a space to place the cheese inside them.
Close the arepas carefully so that all the cheese is covered and put them to cook in a greased pan or frying pan.
Cook until golden brown and ready to eat.
