Equipment
- 1 Medium pot to parboil the yucca
- 1 Budare or frying pan to cook the arepas
Ingredients
- 1/2 kg Selected cassava (select the yucca as white as possible)
- 1 cda Salt
- 1 cda Butter
- 180 gramos White cheese
Instructions
- Place the yucca in the pot and add enough water to cover all the yucca.

- Add a teaspoon of salt.

- Cook for 15 to 20 minutes until the yucca is soft.
- When you are very soft, remove from the heat, remove the excess water and keep it in case you need it to soften the dough. Let it rest so that it cools down a little and we can grind it.

- Mash with a fork until the lumps and the thick vein in the middle are removed, then knead until the dough balls can be formed to make the arepas.

- Heat the budare and spread a little butter so that the arepas do not stick together.

- Place the arepas for 5 or 6 minutes on each side and ready.

- Open the arepa with a knife, add butter to taste and fill with the white cheese.
